1 Lime, zest and juice
2 tbsp. Olive Oil
1 tbsp. Honey
1 tsp. Ground Cumin
1/8 tsp. Cayenne Pepper
Salt and Pepper to Taste
2 cups Frozen Corn, defrosted
1/4 cup Red Onion, finely chopped
1/2 cup Red Pepper
1 (15 oz.) Can Black Beans, rinsed and drained
3 oz. Queso Fresco Cheese, crumbled
2 Avocado, diced (optional)
Small bunch fresh cilantro, chopped
Mix the dressing ingredients.
Combine the salad, then toss with the dressing and serve (or refrigerate up to 2 days, adding cheese and avocado just before serving so it stays a pretty colour).
