1 turkey carcass
2 carrots, roughly chopped
2 celery sticks, roughly chopped
2 onions, halved with skin left on
1 bunch parsley
Pull off any meat on the carcass and reserve for another use. The bones don’t have to be completely clean. Place them in the Instant Pot with any left over pan drippings or small left over turkey bits.
Place carrotts, celery, onion and parsleu into the pot.
Fill pot with water just to cover contents. Close lid and set to soup settings for 15 minutes.
When it is finished let the steam release from the valve.
Strain stock throught mesh sieve and discard bones and vegetables.
Season stock with salt and pepper.
