
This delicious and versatile campfire hash is great for breakfast, lunch, or dinner!
You can follow our classic recipe, or add any of your favorite spices and add-ins to make it your own.
Ingredients
1 large white onion, chopped
2 tbsp oil, (olive, coconut, vegetable, etc)
2 cloves garlic, minced
4 large red or white potatoes, peeled & cubed
1 lb bacon
1 can corn, drained
2-3 green chiles, chopped
1/2 tsp dill
1/2 tsp salt
1/2 tsp pepper
1 handful of your favorite cheese, grated
Directions
1. Cook the bacon in a large skillet over medium heat on the stove or over the campfire.
2. Once the bacon is cooked, remove it from the skillet and discard any extra fat from the skillet.
3. Add 2 tbsp of oil into the skillet and cook the onion over medium heat until tender and transparent, then add the garlic and cook for another minute.
4. Add the potatoes and cook for 30 minutes, uncovered, stirring occasionally.
5. Once the potatoes have browned nicely, add the corn, chiles, spices, and bacon to heat through, mixing well.
6. Sprinkle on some of your favorite cheese, then remove the skillet from the heat.
7. Enjoy immediately and keep the leftovers in the fridge for a delicious breakfast hash!
*Delicious tip: Try adding a fried egg on top of the hash and let the yolk drizzle over before serving!
