Make Ahead Chicken Fajita Skewers

When you are out camping it is easy to end up snacking throughout the day on store bought junk food ( as you should while out on vacation ) but when it comes down to cooking a nutritious and filling dinner for the entire family, you may lack motivation. With this recipe you won’t have to hover over your RV kitchen for hours while you cook, instead you can leave all the work at home and simply pop them on the grill when you are ready!

What you’ll need

  • Chicken breast, cut into 1 inch cubes
  • Olive oil
  • Lime juice
  • Fajita seasoning
  • Bell peppers of different colors, cut into 1 inch squares
  • Red onion, cut into 1 inch squares.
  • Wooden skewers


  1. Trim skewers to fit into a large freezer bag, and place in bowl of water to soak for at 20 minutes.
  2. Toss the chicken in a bowl with olive oil, lime juice from 1/2 lime, and fajita seasoning until evenly coated.
  3. Thread ingredients onto wooden skewer in alternating order and arrange on a baking sheet.
  4. Freeze for 3 hours, or until completely solid.
  5. Transfer into a large freezer bag or reusable storage container.
  6. Freeze for up to 1 month
    When you’re ready to cook your camping dinner, remove frozen skewers from freezer and brush with olive oil before placing over direct heat on a grill with the lid down for about 15 minutes, rotating every 2 minutes as needed, until they are cooked through.
