Easy Potato Salad

A camping staple that you can make ahead!


6-8 red potatoes
8 hard-boiled eggs
6-8 green onions
1 1/2 cups mayonnaise
1 tbsp dijon mustard
Salt and pepper


  1. Peel and cut red potatoes into quarters
  2. Boil until fork-tender, strain and set aside to cool
  3. Add eggs to cold water, bring to boil, remove from heat and let sit for 8-10 minutes. Run cold water over eggs,
  4. Peel cooled boiled eggs, add to potatoes and squish with a fork to mix in
  5. Chop green onions and add to potatoes and eggs
  6. Stir in approximately 1 1/2 cups of mayonnaise and 1 tbsp dijon mustard
  7. Add salt and pepper to taste
  8. Serve!
