Roasted Vegetables in a Cast Iron Pan Over a Campfire | Traveland RV

A healthy campfire recipe that is smoky and delicious!

If one of your New Years resolutions is to incorporate healthier options into your diet, this is the perfect recipe to take on your next camping trip!

Sauce Ingredients

1 tbsp water
1 tbsp soy sauce
2 tsp apple cider vinegar
2 tsp chili or sriracha sauce

Other Ingredients

2 tsp oil (olive, coconut, canola, etc)
1/2 white onion, chopped
2-3 bell peppers, chopped (any colour)
1/2 zucchini, chopped
1/2 cup mushrooms, sliced
1/2 cup grape tomatoes, halved
salt and pepper


1. Get campfire to medium-hot coals and add a grill rack.
2. Place your cooking pan on the grill rack until it heats up fully, then add your oil.
3. Add your onion, peppers, zucchini, and mushrooms to the pan and roast for about 8 minutes, stirring occasionally.
4. Meanwhile, add all of the sauce ingredients to a small bowl and whisk until combined.
5. After roasting for 8 minutes, add your tomatoes and sauce to the pan and cook for another 1-2 minutes until everything is heated through.
6. Season with salt and pepper and enjoy as a healthy and delicious side dish!

*Try adding some boiled potatoes to the pan with the tomatoes and sauce to transform this recipe from a side dish to a filling and nutritious entrée.
