Kale Chip Nachos Recipe


  • 1 bunch leafy kale
  • 1 tbsp olive oil
  • 1 tbsp chili powder
  • 1/4 cup shredded cheddar cheese
  • Toppings of your choice


  1. Choose Kale varieties that have leafy edges to obtain optimum crispiness. Thoroughly wash and dry kale leaves, remove stems. In a large bowl add 1 tbsp olive oil and chili powder. Mix thoroughly, it’s easiest to get your kale fully coated if you use your fingers. Space kale out evenly on a baking sheet.
  2. Bake kale leafy side down in a 350 degree oven for 10 minutes. Remove from oven, don’t worry if they aren’t fully crispy yet – they are going back in the oven! Turn Kale onto other side and add your toppings and cheese, return to oven for an additional 5 minutes or until cheese is melted.
  3. You can choose to top them with whatever your heart desires! Serve with salsa and/or sour cream for dipping.
